A close friend of mine Kelly showed me how to make this. We never measured anything and I still don't but I did so I could make this into a recipe and share with you. It may not look like much but for me this is one of my go to comfort foods.

3/4cupcooked chicken cut into 1/4" pieces
1cupStove Top Everyday Stuffing Mixchicken one in round container
3ozVelveeta cheesecut into cubes so it melts quicker
dash of Sriracha or hot sauceoptional
To make Cheesy Chicken Stuff you put all the ingredients in a pan and give a stir so the stuffing absorbs some of the water.
Cook over medium heat stirring frequently once it start to simmer. Once it starts to simmer it takes about two minutes for the cheese to melt and for some of the water to cook off and you are done. You want it moist without being watery. If you cook it too long just add a little water.
Leftover rotisserie chicken works great for this recipe. You want chicken that is tender and not dry. Chicken stock instead of the water might be ok IF it's not salty.
