16ozchicken breast cubed
2tbsolive oil
2tbslemon juice
2tbsGreek seasoningCavender's All Purpose Greek Seasoning
1sweet pepper cut into squaresoptional and may need more depending on size of pepper
1onion cut into squaresoptional
Instructions
If you are using wood skewers soak them in water for 30 minutes before using them so they don't burn up on the grill.
To make the marinade combine olive oil, lemon juice and spice mix in a small container and mix together well.
Cube the chicken and mix with the marinade. Marinate in the refrigerator for at least 4 hours or over night. If you plan to put pieces of peppers and onions on the skewers also have them prepared and marinade them too if you want.
Done marinating? Let's grill!
Put the chicken on the skewers. I put them close so they will cook just a little slower on the grill allowing more time to get them caramelized a little more. Put peppers and onions between chicken on skewers. This is optional. You could even put them on separate skewers if you prefer.
Your grill should be clean and preheated.
Grill each skewer for about 5 minutes on one side and then another 5 minutes on the other side until the chicken is cooked. Time will vary based on the size of the cubes of chicken and hot hot your grill is.
Time to eat. You can wrap them in aluminum foil if you need to keep them for a little until you are ready to serve them.
Notes
You can use vinegar instead of lemon juice. Though try lemon juice first if you can and see what you like best.You don't have to cube the chicken. You could use chicken tenders or whatever you want. Nice thing about chicken tenders is they are big enough you don't have to skewer them.If you can get boneless turkey thighs they would work well too though the meat itself does taste different.
